The story behind this recipe: My husband asked for soba for lunch, so I made this broth with some leftover chicken. If I didn't have chicken, I would have used tempura bits and green onions instead. Haha.

Ingredients

1 serving
  • Soba Broth (Noodle Broth)
  • 1 1/4 cups☆Water
  • 1/2 teaspoon☆Hondashi (Japanese soup stock)
  • 1 tablespoonand 2/3 teaspoon ☆Soy Sauce
  • 1 tablespoon☆Mirin (sweet rice wine)
  • 1 pinch☆Sugar
  • Other Ingredients
  • About 1/4 piece Chicken Thigh
  • To taste Green Onions
  • Noodles
  • 1serving Soba (dried or fresh)

Steps

  1. 1

    Cut the chicken into bite-sized pieces, quickly blanch in boiling water, and drain in a colander.

  2. 2

    Combine all ☆ ingredients in a pot and bring to a boil to make the soba broth.

  3. 3

    Add the chicken to the pot from step 2 and bring to a boil again. (Skim off any foam that appears)

  4. 4

    Cook the soba to your preferred firmness and drain in a colander.

  5. 5

    Place the noodles and broth in a bowl and enjoy! Top with chopped green onions if you like.

  6. 6

    Use this broth as a base and substitute chicken with beef for beef soba. Feel free to experiment with different ingredients!
