Ready in 10 Minutes! Spicy & Delicious Meat Miso Dipping Noodles

This is our dipping noodle version of 'soup-less mapo noodles.'
No pork bone marrow, chicken bones, or Chinese soup stock needed.
It's rich but won't leave you feeling heavy!

This is our dipping noodle version of 'soup-less mapo noodles.'

For a quick way to turn spaghetti into Chinese-style noodles, see Recipe ID: 19000860. Use this if you don't have Chinese noodles.

Add the sesame oil and all the ingredients marked with ★ to a frying pan. Cook over low heat until everything is fragrant and the oil turns a deep red.

Add the ground pork and 1/3 teaspoon salt to the pan. Sauté over medium heat until the meat is cooked through and the juices run clear. Once the pork is crumbly, add all the ☆ seasonings and stir-fry.

When the seasonings are well mixed, pour in the water and bring to a boil. Skim off any foam. If you like, add the soy milk at the end. Taste and adjust the flavor with salt or soy sauce as needed.

Since this is for dipping noodles, make the sauce a bit stronger in flavor. Sprinkle with Sichuan pepper or black pepper when serving.

You can serve the dipping sauce warm, or chill it in the fridge for a cold version. The spiciness mellows when chilled.

Seasoned Eggs:
If you don't want to make traditional ramen eggs, just place soft-boiled eggs in a mug, pour in noodle soup base, and let them marinate. - 9
After marinating overnight, you'll have flavorful eggs! You can also try marinating in a 1:1 mix of miso and mirin, or in soy sauce koji for different flavors.
