This is our dipping noodle version of 'soup-less mapo noodles.'
No pork bone marrow, chicken bones, or Chinese soup stock needed.
It's rich but won't leave you feeling heavy!

Ingredients

Serves 2 servings
  1. 5.3 ozground pork (150g) (I usually mince regular sliced pork with a knife or food processor.)
  2. 1-2 tablespoonstoasted sesame oil
  3. 1 clovegarlic, minced
  4. 1 cloveginger, minced
  5. 2-inch piece green onion, minced
  6. Up to 2 teaspoons (to taste, for extra heat) doubanjiang (chili bean paste)
  7. 2 tablespoonssweet bean paste (tianmianjiang) or substitute with miso
  8. 1 tablespoonoyster sauce or soy sauce
  9. 1 teaspoonraw cane sugar (adjust to taste)
  10. 2 tablespoonssake (optional)
  11. 1 1/4 cupswater (300ml)
  12. 1/2 cup (100 ml)unsweetened soy milk (optional; adds a creamy, tonkotsu-style flavor)
  13. 1/3 teaspoonsalt, plus more to taste; also pepper and soy sauce to adjust seasoning
  14. Sichuan peppercorn (to taste, optional)

Steps

  1. 1

    For a quick way to turn spaghetti into Chinese-style noodles, see Recipe ID: 19000860. Use this if you don't have Chinese noodles.

  2. 2

    Add the sesame oil and all the ingredients marked with ★ to a frying pan. Cook over low heat until everything is fragrant and the oil turns a deep red.

  3. 3

    Add the ground pork and 1/3 teaspoon salt to the pan. Sauté over medium heat until the meat is cooked through and the juices run clear. Once the pork is crumbly, add all the ☆ seasonings and stir-fry.

  4. 4

    When the seasonings are well mixed, pour in the water and bring to a boil. Skim off any foam. If you like, add the soy milk at the end. Taste and adjust the flavor with salt or soy sauce as needed.

  5. 5

    Since this is for dipping noodles, make the sauce a bit stronger in flavor. Sprinkle with Sichuan pepper or black pepper when serving.

    You can serve the dipping sauce warm, or chill it in the fridge for a cold version. The spiciness mellows when chilled.

    Seasoned Eggs:
    If you don't want to make traditional ramen eggs, just place soft-boiled eggs in a mug, pour in noodle soup base, and let them marinate.

  9. 9

    After marinating overnight, you'll have flavorful eggs! You can also try marinating in a 1:1 mix of miso and mirin, or in soy sauce koji for different flavors.
