This is easy! Just follow these tips. First, crack the eggs.

Tip 1: Gently beat the eggs with chopsticks, keeping them touching the bottom of the bowl to avoid making bubbles.

Add the water and seasonings. Stir gently.

Tip 2: Strain the mixture. This makes a big difference in texture!

Add your favorite toppings to the cups. Use anything you like—I even use bacon sometimes! (Not joking.)

Tip 3: Slowly pour the egg mixture into the cups to avoid bubbles. If bubbles form, skim or pop them.

Tip 4: Cover tightly with aluminum foil. If it’s loose, water will get in. Place the cups in a skillet, add water to the skillet, and turn on the heat.

For extra care, cover with a lid too. Just set it on top of the cups.

Tip 5: Once the water boils, keep it boiling for 1 minute. Then reduce to a gentle simmer (about medium-low heat). From here, offset the lid slightly.

Offsetting the lid helps keep the egg mixture from overheating, so you won’t get holes in the custard.

Steam for about 10 minutes. Remove the foil and poke with a toothpick—if clear liquid comes out, it’s done! If egg mixture comes out, steam a bit longer.
