My kids aren't big fans of potato stews or salads, but I found out they like potatoes when they're roasted, like in potato galette. So I thought, why not try making teriyaki with potatoes and chicken together? It turned out to be a hit!

Wash and peel the potatoes. Cut each potato in half lengthwise, then cut each half in half again lengthwise. Slice into half-moon pieces about 3/8 inch (1 cm) thick.

Adjust the number of potatoes and how you cut them based on their size. For large potatoes, half-moon slices work well.

Soak the sliced potatoes in water to remove excess starch. Yukon Gold or similar potatoes hold their shape better.

Drain the potatoes and place them in a silicone steamer or a microwave-safe dish covered with plastic wrap. Microwave for 3 minutes.

Adjust the microwaving time based on the size of the potatoes and your microwave's wattage.

Cut the chicken thigh into bite-sized pieces.

Heat oil in a skillet. Place the chicken pieces skin-side down, season with salt and pepper, and cook.

Once the skin is crispy and browned, flip the chicken and add the potatoes.

Cover with a lid and reduce the heat to low. Steam for 2–3 minutes. Check if the potatoes are tender and adjust the time as needed.

Remove the lid, give everything a quick stir, and add the sauce ingredients (soy sauce, mirin, sake).

Increase the heat slightly and toss the chicken and potatoes in the sauce until the liquid is mostly gone and everything is coated in a glossy glaze.

For best flavor, cook until the sauce is gone and the potatoes get a bit of browning. Be careful not to use too high heat or it may burn.

Try not to stir the potatoes too much or they may break apart. Gently lift from the bottom when mixing.

Serve on a plate and enjoy! The sweet and savory teriyaki sauce coats the chicken and potatoes perfectly.

If you like it sweeter, add a little sugar to taste. If you add garlic, a bit of sugar will also enhance the flavor.
