Winter Melon Tea with Brown Sugar and Gelidium Jelly

This summer, we went to Baisha Bay on the North Coast to enjoy the water and picked up some locally grown gelidium (seaweed). I made gelidium jelly at home several times—it's nutritious, healthy, and perfect for beating the heat. Homemade gelidium jelly is packed with good ingredients and can be enjoyed in many ways.
Tip:
This recipe makes a larger batch because it was prepared for a community gathering to help everyone cool off. For home use, the usual ratio of gelidium to water is about 1:10.

Add the winter melon and brown sugar concentrate to boiling water and cook until fully dissolved. Rinse the gelidium several times to remove any debris. Bring the gelidium and water to a boil over high heat, then reduce to low and simmer for about 1 hour, stirring occasionally. Place the cooked gelidium into a filter bag, pour into a container, and let cool. Refrigerate overnight before serving.

Serve the chilled brown sugar winter melon tea with gelidium jelly. You can also add aloe vera. (See photo 1)

Cut the aloe vera and gelidium jelly into cubes of similar size. Once chilled, drizzle with honey and sprinkle with a little premium plum powder. This treat is smooth, refreshing, sweet, and has a unique layered flavor—perfect for cooling off. (See photo 2)
