Ingredients

Serves 2 servings
  1. 2 packagesSapporo Ichiban Shoyu Ramen
  2. 1cucumber
  3. 1 tablespoondried wakame seaweed
  4. 10.5 ouncestofu (about 300 grams)
  5. 4cherry tomatoes
  6. For the broth
  7. 1 1/4 cupswater (300 ml)
  8. 2 tablespoonstoasted sesame oil
  9. 2 teaspoonssugar
  10. 2 tablespoonsrice vinegar
  11. 10shiso leaves
  12. 2 teaspoonsground sesame seeds

Steps

  1. 1

    Cut the cucumber into thin strips, quarter the cherry tomatoes, and cut the tofu into bite-sized pieces.

  2. 2

    Rehydrate the dried wakame in water or hot water, then drain and chill.

  3. 3

    In a bowl, combine 1 1/4 cups water (300 ml), the ramen soup base and spice packets, sesame oil, sugar, vinegar, ground sesame seeds, and finely chopped shiso leaves. Mix well.

  4. 4

    Bring 4 1/4 cups water (1000 ml, not included in ingredient list) to a boil in a pot. Add the ramen noodles and cook for 4 minutes.

  5. 5

    Drain the cooked noodles in a colander, rinse well under cold water, and drain thoroughly.

  6. 6

    Place the noodles on plates and top with cucumber, wakame, tofu, and cherry tomatoes. Pour the broth from step 3 over the top to finish.
