This is my original recipe for make-ahead seasoned eggs, perfect for chilled ramen.

Boil the eggs for 7 minutes, then peel them.

In a separate small pot, combine the ingredients marked with ★ to make the seasoning liquid and bring it to a boil.

Add the peeled eggs to the seasoning liquid and simmer.

Turn off the heat, cover the pot with plastic wrap, and let it cool. Then refrigerate the whole pot for about half a day to let the flavors soak in.

The next morning, heat the eggs and seasoning liquid over low to medium heat and simmer until the eggs are well colored.

Transfer the eggs to an airtight container and chill in the refrigerator.

Once the eggs have absorbed enough color and flavor, they're ready. Keep them in the refrigerator until they reach your preferred color and taste.
