It’s May and sometimes the weather is cold and other times its warm, not hot. We are still into spring season. The first day of summer in Canada and the rest of the Northern Hemisphere is on 21 or 22 June when the sun is farthest north.

The tulips are in full bloom and so is the mint. Taking advantage of the new mint leaves, I decided to make mint margarita, non-alcoholic, of course! It has all the flavors together; the sweet, the tangy, the mint and the soda.

There is nothing like mint margarita. During the sizzling summer days, nothing can beat the heat like a glass full of mint margarita. It looks fancy but is super easy to make, with a blender at hand and a few ingredients you have a superbly refreshing drink ready.

Use crushed ice, if you have it, otherwise use ice cubes, like I did!

This drink will definitely be your instant-refresher and a hit! So please yourself and your guests with this super refresher mint margarita.

Ingredients

8-10minutes
3 servings
  • 1/2 cupsugar
  • 1/2 cupwater
  • 1/4 tsp.salt
  • 3-4 sprigsmint (or More)
  • 3lemons, juiced
  • cubesAs required, ice
  • 1 Cupfizzy drink (7up, ginger ale, sprite)

Steps

8-10minutes
  1. 1

    Add the sugar, water, salt, sprigs of mint, lemon juice and ice cubes to a blender.

  2. 2

    Pulse a few times till the ice is completely crushed.

  3. 3

    Dip the rim of glasses in lemon juice and then coat with salt or sugar.

  4. 4

    Fill each glass with half of fizzy drink and pour the mint mixture over till the glass is full.

  5. 5

    Serve immediately.
