  • 1large egg
  • 1 tablespoonwhite wine vinegar or lemon juice
  • 1 cupneutral oil (such as canola or vegetable oil)
  • Salt to taste (you can also add small amount of sugar but it's optional)

    Prepare the Ingredients: Ensure all ingredients are at room temperature. This helps with the emulsification process.

    Mix the Base: In a medium bowl, whisk together the egg, and vinegar or lemon juice until well combined. You can do it manual or use a hand mixer.

    Add Oil Slowly: Start adding the oil very slowly, a few drops at a time, while whisking constantly. This step is crucial for creating a stable emulsion. As the mixture begins to thicken, you can add the oil a little more quickly but still in a slow, steady stream.

    Whisk Continuously: Keep whisking vigorously throughout the process. The mixture should start to thicken and turn creamy.

    Season: Once all the oil is incorporated and the mayonnaise has reached the desired consistency, season with.

    Store: Transfer the mayonnaise to a clean jar or container with a tight-fitting lid. Store in the refrigerator and use within a week.
