Tasty Healthy Roti Noodles
A recipe for which I purposely make extra rotis.
Steps

First, make a normal roti dough with wheat flour and rest for 20 minutes. Make small portions and take 2 portions and roll a bit. Apply oil and coat with wheat flour.

Roll out thin padwadi rotis.
(Even fulka rotis can be used.) - 3
Roast on medium flame taking care not to have any red spots. Cook both sides and open the roti into 2 parts. Similarly,prepare more rotis. Cool and cut the rotis into strips.

Separate the roti strips. Now dry roast all the strips until crispy.

Keep aside. Now chop the vegetables.

Keep all vegetables and sauces ready.

For the Sauce Mix,
mix the above-mentioned different sauces. Chilli powder can also be mixed in the prepared sauces, as per your taste. Keep dry masalas and coriander ready, because Chinese food requires fast cooking. - 8
In oil, add the ginger and garlic. Keeping gas flame fast, cook for 30 seconds. Add in sliced onions and carrot strips. After 1 minute, add the chopped green chillies.

Add in cabbage, capsicum strips and tomato strips. Saute for a minute on fast gas.

Add in 1/4 tsp sugar to retain the crunchiness of the vegetables. Mix. Add in the sauce mix. Add salt and pepper.

Add in noodles masala and 1 tsp coriander. Mix. Now, finally, mix in the prepared roti strips.

Mix and add in some roasted til.
Roti noodles are ready for serving. Garnish with roasted til and coriander. - 13
