For the Crust: In a bowl add cushed Graham crackers, 1 stick melted butter, 1Tbsp. Cinnamon. Mix well. Spoon into a pie dish. With back of spoon or hand pat out crust til combined tight on bottom an up sides of dish. Set aside.

For the Filling: In a large mixing bowl add cream cheese, vanilla extract, powdered sugar then beat with a hand mixer til soft and creamy and combined well. Then gently fold in cool whip til combined well. Pour filling into crust. Then refrigerate til time to add peach topping.

For Topping: In a large skillet add rest butter, rest brown sugar, rest cinnamon, and peaches. Fry and cook on medium heat til everything is melted and peaches are cooked through bout 5-6 minutes. Then in a small cup add cornstarch an water, mix til smooth, pour into peaches. Stir til combined. Cover and cook for another 7-8 minutes stirring occasionally, til sauce has thickened up to desired consistency. Remove from heat and let cool til lightly warm/room temperature.

While topping is cooling remove cheesecake from fridge. Once topping is cool enough pour over cheesecake and spread out evenly. You can either serve immediately or u can do what I do... I refrigerate mine for 1 hour then serve.
