This rice is, hands down, the BEST stir fried rice I have ever made. The rice gods were with me today and I’m making sure I have this little jewel in my vault. We had it with chicken kabobs. All ingredients are approximate and you can add or take away but the vinegar is the key to the flavor.

Ingredients

10 minutes
2 servings
  1. 2 cupscooked white rice
  2. 1/2 cupchopped yellow pepper
  3. 1/2 cupchopped orange pepper
  4. 1/2 cupchopped onion
  5. 4large green onions chopped, save the green tops, chopped, to the side
  6. 1/3 cupSEASONED RICE VINEGAR
  7. Salt, pepper, garlic powder or minced garlic(2 cloves)

Cooking Instructions

    Sauté your chopped vegetables in 4 tbsp of butter with salt and pepper and garlic powder until it’s still crisp tender.

    Add your cold cooked rice, or freshly made if you have it, to the veg and combine and fry in skillet. Add the vinegar and let it cook for a minute, stirring. Take it off the heat and toss in your green onion tops, add a lid and let them wilt. Done! We had our chicken kabobs over a bed of this amazing rice. Hope you enjoy☺️

I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
