Ingredients

Makes 1 batch in a 6×8 inch (16×20cm) baking dish
  • [Cookie Dough]
  • 1 1/4 cupspancake mix or cake flour (about 150g)
  • 2 tablespoonsbutter or margarine, softened (about 25g)
  • 3 tablespoonssugar (about 35g)
  • 1egg
  • as neededGranulated sugar or regular sugar,
  • [Bread Dough]
  • 1 2/3 cupsbread flour (about 200g)
  • 1 teaspoondry yeast (about 3g)
  • 3 tablespoonssugar (about 35g)
  • 1/2 teaspoonsalt (about 3g)
  • 2 tablespoonsmelted butter or margarine (about 30g)
  • 1/4 cupmilk (about 60g)
  • 1/3 cupwater (about 80g)

Steps

  1. 1

    Put the softened butter and sugar in a zip-top bag and knead until combined. Add the egg and knead until smooth.

  2. 2

    Add the pancake mix to the bag and knead until no dry flour remains. Flatten the dough to fit your baking dish and freeze.

  3. 3

    In a microwave-safe dish, combine sugar, water, and milk. Microwave at 600W for 30 seconds. Add the dry yeast and half of the bread flour, then mix.

  4. 4

    Add the salt and melted butter, mix, then add the remaining bread flour. Mix until no dry flour remains.

  5. 5

    Microwave the dough from step 4 at 600W for 20 seconds. Flatten the dough and cover with the cookie dough from step 2. If you like, divide into 6 portions.

  6. 6

    Sprinkle granulated sugar on top and, if desired, score a crisscross pattern. Cover with plastic wrap and let rise for 10 minutes (or until slightly larger, if you have time).

  7. 7

    Bake in a preheated oven at 350°F (180°C) for 20–25 minutes.
