Slice the aubergine (about 1 cm thick)

Beat the egg add a couple of pinches of salt and set aside in a bowl

Put the flour on a large plate

Heat the oil in a frying pan over a medium heat

Take each aubergine slice and dip in the egg then the flour

Fry immediately for about 3 - 5 mins turning once when the slices have turned golden brown on each side remove from the frying pan and drain off excess oil by placing them on kitchen paper on a plate before serving

In the Basque Country the aubergine slices are eaten as pinchos placed on small pieces of crusty white bread often with a piece of serrano ham on top secured in place by a cocktail stick
