Ingredients

  • 4servings Noodles
  • 4servings Pre-cooked protein (chicken, jammy eggs, firm tofu, poached prawns, tempeh, or salmon)
  • 100 gGreen onions, green and white parts chopped separately
  • 1Tomato
  • 1 handfulPeanuts, chopped
  • 1 tbspFresh coriander, chopped (for garnish)
  • 1 tbspSesame oil
  • 1 blockSilken tofu
  • 1 tbspSoy sauce (or to taste)
  • 1 tbspMiso paste
  • 1 tbspPeanut butter or peanut butter powder
  • 1 tbspGochugaru
  • 2Garlic cloves
  • 1Ginger, thumb-sized piece
  • 1small Lime, juiced
  • 1/4 cupPlant milk

Steps

    Prepare noodles and protein of choice. Keep on hand.

  2. 2

    Blend all sauce ingredients until smooth. Adjust seasoning as needed.

  3. 3

    Reserve some green onion tops and peanuts for garnish. Fry the rest in sesame oil in a wok.

  4. 4

    Add noodles to the wok, stir-fry with onions and peanuts for 2 minutes. Throw in tomatoes and fry for 1 more minute.

  5. 5

    Lower heat, pour in sauce, and stir until noodles are coated and warmed through.

  6. 6

    Turn off heat, stir in protein to warm through.

  7. 7

    Serve in bowls. Garnish with coriander, peanuts, green onions, and marinated egg if desired.

Tips

Adjust the sauce to your taste by adding more soy sauce for saltiness, lime for acidity, sugar for sweetness and plant milk or water to thin out.
