
Baked Mackerel with Potatoes in Garlic Sauce

Clean the mackerel place on a plate lightly sprinkle with salt and pour over a little olive oil

Make cuts in the side of the fish and place a slice of lemon in each

Bake in a hot oven (200 degrees) for approx 20 mins

To make the garlic sauce put a generous amount of olive oil in a frying pan (about 8 tbsp), the finely sliced garlic cloves and the whole dried chilli and fry over a medium to low heat remove the whole dried chilli once the sauce is ready and the garlic has turned golden

Peel and slice the potatoes, chop the onion and fry together in a separate frying pan in a little olive oil

Remove the fish from the oven open them up and remove the bones and place on a serving plate then sprinkle over the cider vinegar and pour the garlic sauce over the fish

Place the fried potato slices and onion around the edges of the fish and garnish with a little chopped parsley before serving
