Pork Tenderloin with Purple Sweet Potato Mash

In a Dutch oven, brown the pork on all sides. Add a little water, then add the carrot and onion (chopped), sage, rosemary, and summer savory. Cover and cook for 25–30 minutes, until the pork is fully cooked.

When done, remove the pork and cover it to rest. Deglaze the pan with a little red wine, then strain the sauce.

For the mash: Peel the potatoes and purple sweet potato, then cut into pieces. Cook them in salted water for 25 minutes, covered but with a small gap for steam to escape. Mash with butter and milk.

Purple sweet potatoes are different from orange sweet potatoes: they are not sweet, and you may need more milk or cream to make the mash creamy.
