This is a vegetarian dish I’ve always enjoyed, especially when paired with pickled mustard greens for a flavorful meal.

Fry the tofu and potatoes until golden. Sauté green onions until fragrant, then add finely chopped tomatoes to the pan with oil. Season to taste.

Add the tofu and stir to coat with the tomato mixture. Next, add the fried potatoes. Stir a few times until everything is well combined, then turn off the heat and add green onions.

Transfer to a plate and sprinkle black pepper on top.
