You need 18 threads of saffron to make this unbelievable dinner for two, probably the most elegant white fish dinner I ever make. We grow saffron indoors. One flower produces three saffron threads. 150 flowers produce one gram, 450 threads. It is also available dried in 3 gram cans for $18.
People also use dried mexican shrimpshells and dried turmeric powder as saffron enhancers.

Ingredients

  • 6filets of sole, 2-3 ounces each, one pound
  • 6 Tspsauteed spinach
  • 6 TspRaisins soaked in white wine
  • 1 Tbscrushed walnuts
  • 1 cupBroth from 2 Tbs dried shrimpshells
  • 1 cupwhite cooking wine
  • 1/4 Tspflaked seasalt on potatoes
  • 1/4 Tspgranulated garlic powder on potatoes
  • 1/8th Tsp Sabantini truffle powder on potatoes
  • 1/8th Tsp red cayenne pepper on potatoes
  • For the saffron butter sauce
  • 1 stickunsalted grassfed extra creamy Butter
  • 18threads of saffron
  • 1/4 Tspturmeric powder
  • 1/2 Tspcane sugar
  • 1 Tbsshrimp broth
  • Serve with calimari broth soup
    California Farm Small Octopus
  • Serve with cold octopus appetizer
  • Serve with fresh cucumber salad
    California Farm Hungarian Cucumber Salad
  • Serve with truffled scalloped potatoes

  • Serve with brandied cherries and vanilla icecream

  • Equipment: mortar and pestle, cast iron sauce pan with lid, glassbaking dish, tooth picks, oven
  • Cost: mushrooms $4, sole $4, saffron $1, other $1, $5 dinner

  1. 1

    Make cup of broth from 2 Tbs mexican dried shrimpshells in boiling water, steep ten minutes. Sieve out shrimp shells when broth is ready. The color of the broth must be reddish.

    Crush the saffron and the turmeric with the sugar, add stick of unsalted molten clarified butter, make saffron butter sauce. Keep warm.

    California Farm Clarified Ghee Butter

    Cover the fish filets with sauteed spinach, plumped raisins and crushed walnuts.

    Roll sole filets tight, secure with toothpicks, bake ten minutes in oven at 350F degrees in layer of shrimp broth and leftover cooking wine from soaked raisins, then broil ten minutes at 500 F degrees, in glass baking pan till done. Keep warm.

    Make fresh hungarian cucumber salad with dill and sugar and rice vinegar

    Serve with scalloped potatoes Anna: boil russet potatoes, slice 1/16th” thick slices, scallop, cover with truffle and chicken bouillion, bake. Sprinkle no more than 1/8th teaspoon of red powdered cayenne pepper on four potatoes. Red cayenne pepper is ten times hotter than black pepper.

    Place rolled sole filets on warm dinner plate with scalloped potatoes, drizzle saffron butter over filets.

    Serve with calimari broth
