Aloo ka Bharta is a popular recipe made with mashed potatoes. Besides being super easy to make, this vegetarian side dish is really delicious and comforting (potatoes, after all!)

There are all sorts of aloo bharta versions. in all the versions, there are slight differences in terms of how the potatoes are cooked, kind of oil used as well as spice flavourings, however, overall all these versions are quite similar.

Unlike the western style mashed potatoes, aloo bharta aren't creamy or melt in the mouth. Potatoes are gently mashed with hands and its totally okay if chunks remain).

These mashed potatoes are lightly spiced, generally flavoured. They are generally not made creamy with milk or butter or served with gravy. They are just spiced mashed potatoes. I mean mashed potatoes, in any form are addictive

Ingredients

30minutes
6 servings
  • 4Potato, boiled
  • 6 clovesgarlic
  • 2 inchginger
  • 3green chillies
  • 1 tsp.cumin seeds
  • 1 tsp.curry leaves
  • To taste, salt
  • 1/2 tsp.turmeric
  • To taste, chilli powder
  • 1 tsp.chilli flakes
  • 2 tsp.coriander powder
  • 1/2 tsp.cumin powder
  • 1/2 tsp.garam masala
  • 1 tsp.amchoor powder (dry mango powder)
  • 1 tsp.chaat masala
  • 1green onion, chopped
  • 1tomato, chopped
  • 2 tbsp.oil

Steps

30minutes
  1. 1

    Coarsely grind ginger, garlic, green chillies and curry leaves in mortar & pestle. Set aside.

  2. 2

    Crush the potatoes with hand and set aside.

  3. 3

    Heat oil and add cumin seeds. Allow to splutter.

  4. 4

    Add the crushed masala paste. Fry on medium heat for 2 minutes.

  5. 5

    Add the tomato and fry on medium heat for 2 minutes.

  6. 6

    Add all the spice, give a mix and fry on medium heat till the tomatoes are soft and the spices are cooked.

  7. 7

    Add green onions and mix well.

  8. 8

    Add the potatoes and give a mix and fry on medium heat for 3-4 minutes.

  9. 9

    Cover and cook on low heat for 5 minutes.

  10. 10

    Add garam masala, amchoor powder, chaat masala give a mix and simmer for 2-3 minutes.

  11. 11

    Serve garnished with cilantro.
