This is a Cuban dessert. It’s made with Grapefruit pithe in a sweet syrup. It’s also found throughout Latin America. It’s usually eaten with cheese or cream cheese. I prefer it with Cream cheese.

This is a Cuban dessert. It’s made with Grapefruit pithe in a sweet syrup. It’s also found throughout Latin America. It’s usually eaten with cheese or cream cheese. I prefer it with Cream cheese.
Steps

Remove skin of grapefruit. Cut grapefruit into 12 wide slices. Remove the rind carefully from each slice. Peel the Pithe & save them.

Save grapefruit to eat with sugar or make a drink.
Soak grapefruit pithe overnight (optional). - 3
You can skip that step and start boiling it right away to remove the bitterness.
In large pot, bring grapefruit pithe to boil in 6 cups water. Dump water, add another 6 cups and boil again until grapefruit pithe begins to soften and lose yellow color. Repeat 3 times. - 4
After you decide that it’s no longer bitter then you can start making the almíbar/ syrup. Add 3 cups of sugar, cinnamon stick, and Anise Star. Squeeze a few drops lime juice in it. Stir well. Turn heat to high and cook for 40- 45 minutes until liquid has thickened into thick syrup.

Remove from heat. Transfer to large serving bowl. Put in refrigerator for 2 hours. Enjoy! Buen provecho!
