Lazy pumpkin choc chip banana bars!!

I’m not one to use pre-made cake mix, but we had some lying around the house and i just couldn’t resist making an elevated version of simple yet classic pumpkin bars! They’re really yummy ( especially topped with a bit of greek yogurt and extra chocolate 😋 ) and could even be eaten as an indulgent breakfast :0. i hope you enjoy!!

Preheat oven to 350F/177C

Grease a 9x13 glass baking dish or line with parchment paper and grease.

Mash the banana in a large bowl and mix with pumpkin puree, egg, and oil until combined. If you need to melt the oil, use a small glass bowl, microwave, and set aside the bowl one you’ve poured the oil in.

Add the mix and water (gradually, use your judgement based on the batter thickness you want) to the bowl and fold together until batter forms.

Add your vanilla, salt and spices.

Fold in the oats, chocolate chips, and any other mix-ins you want!

Pour batter into your dish, and top with melted chocolate (you can add a handful chocolate chips to the bowl you melted the oil in and they should slowly melt) and extra chocolate chips. If you want to, put dollops of the melted chocolate periodically onto the batter and use a toothpick/butterknife to swirl the batter and create a design. Have fun with it: perfection is not the goal, only deliciousness!

Put in oven for 25 minutes to start. At 22-25 minutes, use a clean knife to test the bars. If the knife comes out clean and they look done, take them out of the oven. If not, give them a couple minutes extra and repeat until the knife comes out clean. Let the bars cool for around half an hour, cut them up, and enjoy!!
