Strawberry cheesecake cookie

The other day I was really craving subways raspberry cheesecake cookies. So I did the only rational thing, I made a recipe based of them! This is my finished product please enjoy making these cookies and having a great treat!

Preheat oven to 350F

To make sour cream frosting be together, sour cream, powdered sugar and vanilla in your stand mixer using paddle attachment then transfer to a small bowl and put in fridge

In a large bowl whisk together all-purpose, flour, cornstarch, baking soda, and salt

In a separate bowl mixed together the sugars and the butter mix for about three minutes on high

Then mix in the egg and egg yolk and vanilla until incorporated

Now add the dry mixture to the wet mixture do not over mix

Slowly fold in white chocolate chips and freeze dried strawberries

Then take about 2 tablespoons of your dough and make a hole in the middle put the sour cream mixture into the hole and cover up the top

Put the dough balls that are made in the fridge for 15 minutes to firm up

Place the dough balls on a baking sheet about 2 inches apart and only six to one sheet put in the oven for 12 to 15 minutes or until edges are brown

Allowed cool and enjoy!
