Cook Quinoa:
• Rinse quinoa in a strainer under running water for 2 minutes.

• Grate or finely chop ginger.
• Slice shallots, and finely chop bell pepper, carrots, and coriander leaves. - 5

• Heat olive oil in a kadai. Add grated ginger and sauté briefly.
• Add shallots and sauté until they change color.
• Stir in turmeric, black pepper, and salt, then cook for a minute.
• Add carrots and bell pepper. Cover and cook for 3 minutes. Let cool. - 6

Prepare Egg Mixture:
• Beat eggs in a bowl. Add cooked quinoa, veggies, and coriander leaves.
• Mix in grated cheese until well combined. - 10

Cook the Poppers:
• Heat a paniyaram pan and grease molds with olive oil.
• Pour a tablespoon of batter into each mold. Cover and cook for 3-4 minutes until the base is golden. Flip and cook for another 2 minutes.Serve your Quinoa and Cheese Egg Poppers hot with your favorite dip or chutney. Perfectly poppable and utterly delicious!

Tip: The basic process for cooking quinoa:
1. Rinse the Quinoa: Place the quinoa in a fine-mesh strainer and rinse it thoroughly under cold running water for 2 minutes. This helps remove its natural coating called saponin, which can taste bitter.
2. Optional Soaking: If you want to soak quinoa, you can do so for about 30 minutes to 2 hours before cooking. This step can make it easier to digest and slightly reduce the cooking time. After soaking, drain it well. - 19
3. Cooking the Quinoa:
• For every 1 cup of quinoa, use 2 cups of water or broth.
• In a saucepan, combine the rinsed (and soaked, if desired) quinoa and water (or broth).
• Bring it to a boil, then reduce the heat to low and cover.
• Simmer for about 15 minutes or until the quinoa has absorbed all the liquid and is tender.
• Remove from heat and let it sit, covered, for 5 minutes. Then fluff it with a fork before serving.This method results in fluffy, perfectly cooked quinoa!
