My normal mixing of recipes created this absolute show stopping dish. cheap to make but also amazing for a dinner party. Enjoy :)

My normal mixing of recipes created this absolute show stopping dish. cheap to make but also amazing for a dinner party. Enjoy :)

In a large oven proof pot brown the beef on top of the stove in batches - I did 4. I also used a bit of beef marrow I had left over or ou can use some normal oil so it does not stick.after each batch transfer to a bowl and set aside. (Pre heat oven 160C)

In the same pot add the chorizo and onion on medium head so the oil starts to run and the onion starts to brown slightly. Add the Carrots and cook for 2-3 mins.

Spinkle in the flour and stir until the flour is cooked off about 2 mins then add the stock. mix well so no lumps then add the wine. Return the Beef and add the dried mushrooms and stir well.

Put the pot with the lid on ontop the bottom shelf of the oven and allow to cook for 2 hours. I then remove and stir and check the beef. normally this type of beef takes 2.5 - 4 hours to be fall apart amazing. This one was nearly ready after 2.5 hours. replace into oven without the lid so that the gravy now thickens and concentrates. I reduce temp to 150C

Check again after 30 mins and the beef should be amazing. I added some button mushrooms now - keep doing until its perfect you can add a little hot water if the sauce becomes to thick.

Serve with Creamy Mash Potatoes and veg of your choice. AMAZING :P
