SWEET & SOUR BLACK (DESI) CHICKPEAS

Soak black (desi) chickpeas for 6 hours. Then, pressure cook them with baking soda and salt for 5 whistles.

Heat oil in a pan. Once hot, add mustard seeds and let them splutter. Then, add cumin seeds and let them splutter as well. After that, add cloves, crushed ginger, and chilies and sauté them. Next, add a little turmeric and red chili powder before adding the boiled chickpeas. Let the chickpeas simmer, then add all the spices and jaggery, and continue to simmer until the flavors meld.

Add chickpea flour to yogurt and make a smooth paste. Mix this paste into the chickpeas. After a little while, once the gravy thickens, turn off the gas. So sweet and sour chickpeas are ready! Transfer them to a serving bowl.
