For the peach glaze, take a medium bowl and add all glaze ingredients. Mix until combined. Set aside.

For the pork, add pork pieces in a medium bowl with salt, pepper, and chili powder. Toss well to ensure the pork pieces are evenly coated. (I seasoned the chops on both sides first and then cut into pieces on a plate.)

In a large 12 inch skillet, heat oil over medium heat. Once hot, add seasoned pork pieces. Sear for 3-5 minutes on all sides until the pork is cooked through and reaches an internal temp of 145°F (13-15 mins).

Remove pork from pan onto a plate and tent to keep warm. (I just put mine in the microwave to hold.)

To the same skillet over medium heat, add jalapeno peppers. Cook for 3 mins. Then add peaches. Cook for an additional 3 mins. (Or until peaches have softened)

Pour the prepared peach glaze into the skillet with the peaches and the jalapenos. Stir to coat everything evenly with the glaze, scraping any browned bits on the bottom.

Return pork bites to the skillet with the glaze. Spoon the glaze over the pork for 1-2 mins. or until the pork is heated through.

Garnish with parsley. Serve warm. (This can be served by itself or I was thinking would be wonderful over cooked white rice.)
