Steps

Wash urad dal and moong dal thoroughly 4 times. And soak in water for at least 3 hours. Strain all water and grind in a mixer along with green chilies, if needed add the required tsp of water, otherwise don't add.

Keep aside vada batter for at least 1 hour. Mix well continuously to make the batter light and fluffy. It will take 10 minutes. Keep ready salted hot water to soak Vada in it.

Heat oil in a kadai, Add salt, and eno soda in the batter, and mix well. Put Vada in hot oil, and fry until golden yellow. Keep it aside to cool it.

Now add all the vada in hot water, to make it super soft. Add sugar and salt to chilled dahi, and churn well. In a serving dish, arrange soft vada.. Pour dahi on it..

Put all 3 chutneys on it, sprinkle roasted jeera powder, red chili powder, coriander, and pomegranate seeds. Enjoy cool, sweet, spicy, tangy, and yummy Dahi Vada Chaat.
