Grind the black sesame seeds until no whole seeds remain.

Mix the soy milk, milk, and sugar over medium heat to let the sugar dissolve. Meanwhile, bloom the gelatin in 3 tbsp of water.

When the sugar is dissolved and before it boils, turn the heat off. Mix in the gelatin (you may need to add some of the mixture in the gelatin to soften it first, if it has hardened)

Strain the mixture into a bowl. Grab a bigger bowl and fill it with ice and water. Put the mixture bowl on top to create an ice bath. Pour in the whipped cream and whip to thicken.

Skim the bubbles off if you’d like a smooth surface. Cover and refrigerate for at least 4 hours, or until they have set.

I like to add some maple syrup on top if I want it more sweet, but it’s not needed and is optional! Play around with some sauces if you’d like. Enjoy :)

Once thickened, add in the ground seeds and mix.
