Sweet Miso Mackerel & Egg Rice Bowl

When I don’t want to cook anything, particularly on a hot day, a rice bowl made with a canned fish is a go-to dish. Rice can be cooked by rice cooker. Canned Mackerel doesn’t need to be cooked. Egg needs to be cooked but it can be done very quickly using microwave. It took less than 5 minutes for me to prepare this rice bowl.

Ingredients

1 Serving
  1. Mackerel
  2. 1 can (125 g)Mackerel in Brine *drained
  3. 2 teaspoonsMiso *I used dark colour type
  4. 1 teaspoonSugar
  5. 1 teaspoonMirin
  6. 1/4 teaspoongrated Ginger
  7. Egg
  8. 1Egg
  9. 1 pinchSalt
  10. 1 teaspoonMirin
  11. Other Ingredients
  12. 1serving warm Cooked Rice
  13. Finely chopped Spring Onion
  14. Toasted Sesame Seeds

Steps

    To prepare Mackerel, combine Miso, Sugar, Mirin and grated Ginger in a small bowl, add drained Mackerel, and mix well breaking up the Mackerel into flakes.

    To prepare Egg, whisk Egg in a heat-proof bowl, add Salt and Mirin, and mix well. Heat in the microwave until half-cooked. Use a whisk and mix it, breaking up the cooked part, then heat again until cooked. Use the whisk to break up into small pieces.

    Half fill a bowl with warm Cooked Rice and cover it with the Egg and Mackerel. Add some finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy.
