What to do with so many onions? Bring out their natural sweetness with this simple yet powerful side dish.

Preheat the oven to 180°C. In the meantime, wash the onions skin on and place them on a bed of coarse salt.

Bake the onions for 40 minutes, or until tender.

While waiting for the onions to cool, prepare the vinaigrette. You can use basil if you don’t have parsley too.

Peel and slice the onions, then add the vinaigrette and mix. I served mine with a baked white fish. Enjoy!
