  1. 20–25 medium wild-caught shrimp, peeled and deveined
  2. 3eggs
  3. 2–3 tbsp cooking oil
  4. 1/2 tspsalt
  5. Pinchblack pepper
  6. 1 tbspwater
  7. 2 tspchopped scallions for garnish Optional

    Rinse and pat dry the shrimp. Beat the eggs with salt, and black pepper.

    Heat 2-3 tbsp oil, Pour eggs into the pan and let them sit for a few seconds before gently stirring, to large soft chunks form.

    Heat oil in a non-stick pan. Add scallions and cook for 5–10 seconds. Add the shrimp and cook until just pink.

    Add the eggs back with the shrimp and fold gently until just combined, about 30–60 seconds. Enjoy!
