A new version with a different kneading and fermentation process.
Steps

Place all the dough ingredients except the yeast into the bowl of a stand mixer fitted with the dough hook attachment.

Knead the dough, letting it rest as needed, until you can stretch it thin enough to see through without tearing.

Knead for about 10 minutes, scraping down the sides of the bowl with a spatula as needed (the dough will be quite sticky), then let it rest for 10 minutes.

Repeat this process 4 or 5 times until the dough is almost ready. At that point, add the yeast and continue kneading for another 10 minutes or until the dough is smooth and elastic.

Oil your hands and work surface, shape the dough into a ball, and roll it out as thin as possible into a rough rectangle. Gently stretch the dough from underneath with your hands to make it even thinner.

Spread a layer of lard over the entire surface, then place a strip of chocolate hazelnut spread along one long edge. If you prefer a plain ensaimada, skip the filling.

With your hands well-oiled and using a bench scraper if needed, roll the dough up into a cylinder.

Place the cylinder on a baking sheet lined with parchment paper and let it rest for about 30-45 minutes.

After resting, gently stretch the roll and shape it into the classic ensaimada spiral, leaving space in the center of the spiral.

Let it rise in the turned-off oven until it has doubled or tripled in size. The time will vary depending on temperature and amount of yeast—check it periodically.

Once it has risen significantly (mine took about 18 hours), remove it from the oven and preheat the oven to 350°F (180°C).

Bake until golden brown. Keep an eye on it, as it bakes quickly.

I like to dust a first layer of powdered sugar over the ensaimada as soon as it comes out of the oven.

Let it cool completely, then dust with more powdered sugar before serving.
