Ingredients

  • 1 boxyellow cake mix (15.25 oz)
  • 1 boxinstant butterscotch pudding mix (3.4 oz)
  • 3large ripe bananas (mashed, about 1 ½ cups)
  • 3large eggs
  • 1/2 cupvegetable oil (or melted butter for richer flavor)
  • 1/2 cupmilk (or water)
  • 1 tspvanilla extract
  • Optional: ½ cup chopped walnuts or pecans

Steps

    Preheat Oven: Set oven to 350°F (175°C). Line a muffin tin with cupcake liners. Mix Dry Ingredients: In a large bowl, whisk together the yellow cake mix and butterscotch pudding mix. Add Wet Ingredients: Add mashed bananas, eggs, oil, milk, and vanilla. Beat with an electric mixer on medium speed for about 2 minutes, until smooth and fluffy.

    Fold In Nuts (Optional): If using, gently fold in walnuts or pecans. Fill Cupcake Liners: Scoop batter into prepared liners, filling each about ⅔ full. Bake: Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean. Cool: Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Topping Ideas:

Butterscotch glaze: Melt butterscotch chips with a little cream and drizzle on top.

Cream cheese frosting: Mix cream cheese, butter, powdered sugar, and vanilla for a tangy-sweet topping.

Caramel drizzle: Add extra indulgence by drizzling caramel sauce over frosted cupcakes.
