In a moderately heated pan add oil, add Bhindi and sauté by adding slight salt and green chili. Sauté for 7-8 minutes under a medium flame, cook 80 % and keep aside.

In the same pan add oil, allow oil to heat, add cumin seeds + carom seeds and allow to crackle for a few seconds then add Hing, and onion + garlic and stir fry till golden brown.

Add chopped tomato + salt and cook till the water from tomato evaporates, then add all spices + little water and fry till spices leave oil. Add 2 tbsp water, mix well and allow to cook.

Add fried Bhindi, mix gently, cover and cook under low flame for 4-5 minutes. Check in between. Keep in stand by mode for 2-3 minutes and dish is ready.
