Prepare all ingredients.

Beat the egg. Heat a pan with 1 tablespoon olive oil, pour in the egg, and cook until half set. Break it up with a spatula.

Add the edamame and stir-fry for 30 seconds. Add the cauliflower rice and stir-fry for another 30 seconds. Add the vegetarian stir-fry seasoning, mix well, and remove from the pan.

Heat 1 tablespoon olive oil in a pan. Add the shrimp and stir-fry for 30 seconds until just cooked, then set aside.

Cut the water bamboo into bite-sized pieces. Bring water to a boil, add the water bamboo, and cook over medium-high heat for 1 minute. Drain well.

Heat a pan over medium heat, add the water bamboo and XO sauce, stir-fry until evenly coated, then remove from the pan.

Assemble everything into a lunch box.

1 tablespoon (1T) = 15ml
1 teaspoon (1t) = 5ml
1/2 teaspoon = 2.5ml
1/4 teaspoon = 1.25ml
1 cup = about 240ml
