A super popular noodle dish that both adults and kids love.

Wash the scallions and cut them into pieces.

Add the oil to a cold pan.

Once the pan is hot, add the scallion pieces and cook over low heat to infuse the oil with scallion flavor.

Let the scallions cook until they are slightly browned and crispy. This takes some time, so be patient.

When the scallions are golden and slightly charred, add the soy sauce and oyster sauce. Turn the heat to medium.

At the same time, bring a pot of water to a boil and cook the noodles according to package instructions.

Keep stirring the scallion oil mixture until it comes to a boil, then turn off the heat.

Once the noodles are cooked, drain and place them on a plate. Pour the scallion oil mixture evenly over the noodles, toss well, and enjoy!
