Ingredients

15 minutes
Serves 3 servings
  1. Scallions, cut into 2-inch pieces (a small handful)
  2. Vegetable oil (5 tablespoons / about 75 ml)
  3. Soy sauce (2 tablespoons / about 30 ml)
  4. Oyster sauce (1 tablespoon / about 15 ml)
  5. Noodles (enough for your desired servings)

    Wash the scallions and cut them into pieces.

  2. 2

    Add the oil to a cold pan.

  3. 3

    Once the pan is hot, add the scallion pieces and cook over low heat to infuse the oil with scallion flavor.

  4. 4

    Let the scallions cook until they are slightly browned and crispy. This takes some time, so be patient.

  5. 5

    When the scallions are golden and slightly charred, add the soy sauce and oyster sauce. Turn the heat to medium.

  6. 6

    At the same time, bring a pot of water to a boil and cook the noodles according to package instructions.

  7. 7

    Keep stirring the scallion oil mixture until it comes to a boil, then turn off the heat.

  8. 8

    Once the noodles are cooked, drain and place them on a plate. Pour the scallion oil mixture evenly over the noodles, toss well, and enjoy!
