A traditional Rwandan chicken stew that’s rich, flavorful, and comforting.
Steps

Prepare the chicken:
Wash and pat dry the chicken pieces. Season lightly with salt and pepper. - 2
Brown the chicken:
Heat oil in a large sufuria over medium heat. Add chicken pieces and fry until golden brown on all sides. Remove and set aside. - 3
Cook the aromatics:
In the same sufuria, add onions and sauté until soft and lightly browned. Add garlic and ginger, and cook for another minute until fragrant. - 4
Add tomatoes:
Stir in diced tomatoes and cook until they soften into a thick sauce. Add paprika and crumble in the stock cube if using. - 5
Simmer the stew:
Return the browned chicken to the pot. Stir to coat with the sauce. Add water or broth, cover, and simmer for 30–40 minutes, or until the chicken is tender and the sauce thickens. Stir occasionally. - 6
Finish and serve:
Taste and adjust seasoning. Garnish with chopped coriander.
Tips
For extra flavor, marinate the chicken in garlic, ginger, and salt for 30 minutes before cooking. Serve hot with rice, plantains, or ugali for an authentic Rwandan experience.
