Prepare the ingredients. Use a mandoline or vegetable peeler to cut the carrots into sticks—it's quick and easy. Place them in a large bowl, add the olive oil, and salt to taste. I recommend using just a little salt, as the flavor will concentrate when the carrots shrink.

Arrange the carrot sticks on the air fryer rack, making sure they are spread out. If you have too many, cook them in two batches. Place in the air fryer at 300°F (150°C) for 10 minutes. Remove and toss to separate the sticks. Return to the air fryer for another 10 to 20 minutes, tossing occasionally.

When the carrot sticks are golden and crispy, remove them from the air fryer and let them cool slightly so they finish crisping up. Enjoy!
