In a bowl, combine warm water, sugar, and yeast; let sit for 5–10 minutes until foamy.

Add flour, salt, and olive oil, then knead into a soft dough; cover and let rise for about 1 hour until doubled in size.

Preheat oven to 220°C (425°F). Divide dough into 4–5 portions and roll each into an oval shape.

Fold the edges inward and twist the ends to form a boat shape, leaving a well in the center.

Mix the cheeses and fill each dough boat generously.

Bake for 12–15 minutes until the bread is golden and cheese is bubbling.

Remove from oven, crack an egg into each center, and return to bake for 3–5 minutes until the egg white sets.
