Ingredients

Prep 20 mins (+1 hr rise) / Cook 20 mins

  1. 3 1/2 cupsall-purpose flour
  2. 1 tspsalt
  3. 1 tspsugar
  4. 2 1/4 tsp (1 packet)active dry yeast
  5. 1 cupwarm water
  6. 2 tbspolive oil
  7. 2 cupsmozzarella cheese, shredded
  8. 1 cupfeta cheese, crumbled
  9. 4–5 eggs
  10. 2 tbspbutter

Steps

Prep 20 mins (+1 hr rise) / Cook 20 mins

    In a bowl, combine warm water, sugar, and yeast; let sit for 5–10 minutes until foamy.

    Add flour, salt, and olive oil, then knead into a soft dough; cover and let rise for about 1 hour until doubled in size.

  3. 3

    Preheat oven to 220°C (425°F). Divide dough into 4–5 portions and roll each into an oval shape.

    Fold the edges inward and twist the ends to form a boat shape, leaving a well in the center.

  5. 5

    Mix the cheeses and fill each dough boat generously.

  6. 6

    Bake for 12–15 minutes until the bread is golden and cheese is bubbling.

  7. 7

    Remove from oven, crack an egg into each center, and return to bake for 3–5 minutes until the egg white sets.

  8. 8

    Add a small piece of butter on top and serve hot

Tips

For the best texture, mix the egg and melted cheese together just before eating—it creates the signature creamy, rich filling.
