Ingredients

  • 1large egg
  • 1/2 cupplain Greek yogurt (about 100 grams)
  • 2/3 cupall-purpose flour (about 70 grams)
  • 1/2 tablespoonbaking powder
  • 1 teaspoonsweetener
  • Vanilla extract or other flavoring

    Using an electric mixer, beat the egg and Greek yogurt together for about 1 minute.

    Add the remaining ingredients. Gently fold everything together with a spatula.

    Preheat a skillet. Place 1 tablespoon of batter in the pan, pour a little water into the edge of the pan, cover, and cook gently on both sides.
