Good morning! I had the day off work today and wanted to make a delicious breakfast for Santiago so we could eat together. They turned out great and are a healthy option. You can use a sweetener if you can't have honey.

Good morning! I had the day off work today and wanted to make a delicious breakfast for Santiago so we could eat together. They turned out great and are a healthy option. You can use a sweetener if you can't have honey.

First, hydrate the oats with the water. Mix a little and let it sit for a few minutes. If you're making this for someone with gluten intolerance, be sure to use certified gluten-free oats, since not all oats are gluten-free! When the mixture becomes thick and sticky, it's ready to use.

The pear I used was very ripe, so I didn't add sugar because it was already sweet. If you want it sweeter, you can add a tablespoon of sugar to the mixture. Cut the pear into pieces and add it to the oats. Mix well so everything is combined. If you like honey, you can add a little to the mixture for flavor, and I also added a pinch of cinnamon.

To cook, I used a skillet and silicone rings, but if you don't have them, you can just shape the pancakes with a spoon. Add coconut oil to the skillet, heat it a little, then add spoonfuls of the mixture into the rings. Cover and cook on low heat for about 5 to 7 minutes.

To flip, use a spatula and carefully turn them over when they're golden brown. If they need more time, wait a bit longer so they're not raw inside. Cook for about 5 more minutes, then remove to a plate.

This recipe makes 2 pancakes! If you want more, just double the ingredients. The pear makes them very moist and not dry at all. You can also use banana or apple. If you make this recipe, I'd love to see a photo of how it turned out.
