First, take 6 sheets of phyllo dough, about 10 inches (25 cm) each (cut them to fit your pan if needed). Brush each sheet with melted butter and layer them in the pan. Bake at 350°F (180°C) for 15 minutes with a weight on top.

Meanwhile, blanch the fresh peas for 1 minute and the cleaned lacinato kale for 2 minutes. Grill the radicchio on a grill pan; if you like, sprinkle a little brown sugar on it. Use a vegetable peeler to slice the carrot and zucchini into ribbons. Slice the radishes and cucumber thinly with a mandoline. Cut the cherry tomatoes in half.

After 15 minutes, remove the weight from the phyllo. Place the halved cherry tomatoes on a separate baking sheet, sprinkle with a little salt and sugar, and bake for about 12 more minutes. Meanwhile, make the cheese spread by mixing the cream cheese, olive oil, salt, pepper, orange zest, and apple cider vinegar. Stir well and let it rest.

Once the phyllo base is out of the pan, spread the cheese mixture over the bottom. Arrange the vegetables on top as you like, balancing the bitter and sweet flavors. Serve and enjoy!
