Kunun papa

Kunun Papa is an old Hausa drink from Northern Nigeria - Katsina, Kano, Sokoto, Zaria.
In olden days, our grandmothers didn't throw away rice water. When they washed rice for tuwo, the white water that comes out, they kept it.
They discovered that if they leave that white water for one day, it becomes small sour (ya yi tsami) and when they pour hot water inside, it becomes a light, sweet-sour drink that cools the body.
That drink they called *"Kunu"* (the general name for all Hausa drinks) *"Papa"* because it looks like pap/baby pap but very light.
*Why they loved it:*
1. For new mothers - it gives strength after birth
2. For fasting - very light on stomach, doesn't cause ulcer
3. For hot season - you drink cold and your body will cool
4. It was cheap - made from leftover rice, so poor and rich can drink it

Steps

Wash 1 cup white rice or white millet 2 times Soak it in water overnight (8 hours). Drain water. Add small ginger.

Grind it smooth with blender.Sieve with fine cloth, collect the white water. Leave the white water for 3 hours to settle. Throw the clear water on top away.

Boil 2 cups water till very. Pour hot water small small into the thick pap and stir fast till light like yoghurt.Add sugar and pinch of salt.Drink warm or add ice.
If you want sour taste, leave the sieved water for 1 day to ferment small before adding hot water.
