Gather all your ingredients. Wipe the oyster mushrooms with a damp cloth (avoid washing them under water to prevent them from becoming soggy). Trim off the tough base and separate them by hand along the gills, or leave them whole if you prefer a meatier texture.

Line a baking sheet with parchment paper. Arrange the chicken strips to cover the bottom, then season with olive oil, salt, and rosemary leaves. Place the mushrooms on top to cover the chicken, then drizzle with olive oil, season with salt, and sprinkle with the breadcrumb and cheese mixture.

Preheat the oven to 350°F (180°C) for conventional or 320°F (160°C) for convection. Bake the tray on the middle rack for about 18-20 minutes. For the last 3-5 minutes, switch the oven to broil.

Once out of the oven, let it cool for 5 minutes. Plate the dish and finish with a drizzle of extra virgin olive oil and some fresh rosemary.
