A delicious, creamy, and flavorful pasta dish with sautéed radicchio, onion, Parmesan cheese, black pepper, and a creamy cheese sauce. Quick and tasty—perfect for a weeknight meal.

Start by cutting the radicchio in half and removing the darkest outer leaves. Rinse the leaves under running water in a colander and shake off any excess water.

Place the radicchio on a cutting board and slice it into thin strips.

Meanwhile, fill a pot with cold water for cooking the penne. Cover and bring to a boil. Once boiling, remove the lid, add salt, and stir in the penne. Cook over medium-low heat.

Finely chop the medium onion on a cutting board. In a large skillet, add half a cup of cold water. Add the radicchio and cook, covered, for a few minutes to soften.

Add a ladle of pasta cooking water, season with a pinch of salt and freshly ground black pepper, and cook over very low heat. When the radicchio is wilted, turn off the heat and set aside.

Cut the cheese into small pieces and place in a small saucepan with a splash of milk. Heat until the cheese melts and thickens. Set aside.

Transfer the al dente penne to the skillet, adding a ladle of pasta cooking water and the creamy cheese sauce. Stir over high heat until creamy. Turn off the heat and add the radicchio, more black pepper, and a handful of grated Parmesan cheese.
