Ingredients

About 18 minutes
Makes 10 rolls
  1. 4 cupsall-purpose flour (about 500 grams)
  2. 2 1/2 teaspoonsactive dry yeast (about 10 grams)
  3. 1 1/4 cupswarm water (about 300 ml)
  4. 2 teaspoonssalt (about 10 grams)
  5. 1 tablespoonbutter
  6. 1egg, for brushing
  7. 1 teaspoonnigella seeds
  8. 1 teaspoonsesame seeds
  9. 1 tablespoonrolled oats

Steps

About 18 minutes

    Place the flour in a large bowl and make a well in the center.

  2. 2

    Add the yeast and a little water, cover, and let sit for 10 minutes.

  3. 3

    Mix in the salt, butter, and the remaining water. Knead the dough for about 7 minutes.

  4. 4

    Cover and let rise for 1 hour, until the dough has doubled in size.

  5. 5

    Oil or wet your hands, then divide the dough into balls.

  6. 6

    Place the dough balls on a buttered baking sheet, cover with a towel, and let rise again.

  7. 7

    Brush with egg, sprinkle with nigella seeds, sesame seeds, and rolled oats, then score the tops with scissors.

  8. 8

    Bake at 400°F (200°C) for about 18 minutes.
