Miso Mayo Mackerel Rice Bowl

I often make a rice bowl for my lunch, and I most frequently use a small can of Fish to make it. Tuna, Sardines and Salmon are the regulars, but my favourite is Mackerel. Today I seasoned it with Miso and Mayonnaise. I ate it with freshly cooked Rice. Such a quick and easy dish, very nutritious, and absolutely delicious.

If onion is too peppery, rinse under cold water, then drain well.

Combine grated ginger, White Miso and Japanese Mayonnaise in a small bowl, add mackerel and onion, and mix to combine.

Half fill a bowl with warm cooked rice and cover it with the mackerel & onion mixture. Add some spring onion and Shichimi (Japanese Chilli Spice Mix), and enjoy.
