Ingredients

3 to 4 hours
28 servings
  • 2 boxesmanicotti noodles
  • 2 (16 oz)packages bacon. Thin sliced
  • 1 1/2 lbslean ground beef
  • 1 lbsweet Italian sausage
  • 6 ozcream cheese
  • 1medium yellow onion, minced
  • 1small can diced green chilies
  • 1 tbseach; garlic powder, and honey bourbon bbq seasoning
  • 1 tspeach; white pepper, chili powder, smoked paprika, regular paprika, and salt (depending on how salty your bbq seasoning is)
  • 1 lbshredded extra sharp cheddar cheese
  • 1/4 cupbread crumbs
  • 1 bottleyour favorite bbq sauce, divided

Steps

    Bring a large pot of water to a rolling boil. Lightly salt the water. Par boil the manicotti noodles for 2 to 3 minutes. No longer. You want the noodles to still be firm. Immediately drain and rinse under cold water to completely cool noodles. Let noodles drain completely.

    In a large mixing bowl combine the rest of the ingredients except the bacon and bbq sauce. Add 2 tbs of the bbq sauce to the mix. Reserve the rest. Mix well.

    Bring bacon to room temperature

    For this step, I found the easiest way to fill the noodles was to use a Jerky gun. They are kind of like a frosting decoration gun, but built heavier for use with ground meats. Or use a sausage stuffer if you have one. Fill each noodle gently. And set aside on a baking sheet. Next wrap each noodle with a strip of bacon. Try to stretch it and wrap as much of the noodle as you can.

    The cooking part is where this can go 2 directions depending on what kind of smoker you have. Determine whether you have a hot or cold smoker and proceed as follows.

    For a hot smoker, set smoker to 250 degrees F. Place shells on rack and smoke for 2 to 3 hours until bacon is starting to get crispy and internal temp reaches 160 degrees. Baste with bbq sauce the last 20 minutes of cook time. Remove to a baking sheet, baste again and let rest before serving.

    If you have a cold smoker, does not smoke over 90 degrees F, place shells on the rack. Smoke for 2 hours. Remove shells to baking dishes. Baste with bbq sauce and bake at 325 degrees F for 60 minutes. Baste again halfway through. When done, remove shells onto paper towels to drain. Move to a baking sheet and baste again. Rest them for a few minutes before serving. Enjoy.

Tips

Use either pecan or apple wood to smoke. Hickory can overpower the flavor.

You can play with sauces, I did half bbq and half Caribbean jerk sauce.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
