Separate the white and the yolks. Add 3 TBSP of Japanese KEWPIE mayonnaise, sugar, pinch of salt and pinch of pepper.

Mix until well-combined. Put aside. Finely chopped the whites.

Add chopped egg whites into egg yolks mixture. Combine well. Spread some salted butter on one side of the bread slices. To assemble, place generous amount of filling on the bread slices. And top with another bread slices. Serve right away or store in a covered container in the fridge.
Tips
1. Trimming off the crust is optional.
2. If you find your egg filling is to thick, you can add a tbsp of fresh milk 🥛 to make it creamier.
3. Instead of using salted butter spread, you can also use cheese spread on the bread before putting the filling.
